I know I am a little behind, but is there a way for me to get caught up with my updates?

Because all of the updates to get you to V11 are so large, you will have to take your phone to a VZW store to get caught up.  It should not take them that long to update it.  Half hour at best.

I took my phone to verizon store and they said that V04 is too many updates behind and if they try updating it they will fry the phone...Any remedies for this or am I stuck 7 updates behind? Thank you!

Ok will do first thing in the morning-do you believe it will work if they try to update it? I am willing to risk frying the phone just to be caught up, I didn't know that updating the firmware could damage the phone.

Before they start they will back up your info.  Anytime you flash it you run the risk of bricking it.  Same as flashing the BIOS on your computer or eprom.  I know of a few that have had to update from v7 and v4 with no issues.  You should be fine.  If they brick it they give you another.
